Exploring Northern Thailand

I'm currently volunteering in Chiang Mai and would like to explore more of northern Thailand before I travel to the south, Cambodia and Vietnam in Spring. As I have to work most of the time I only have time on the weekends so I would like to do some short trips to Pai, Lamphun, Chiang Rai and many other places in the north.

Things I want to do: Visiting Temples and markets, go swimming at waterfalls, going out for drinks at night, try some local food and having some fun. I haven't got anything specific planned though so I'm open for anything.
